Fresh Tomato Bruschetta

As soon as we have fresh garden tomatoes and fresh basil, one of my favorite recipes to prepare is this Tomato Bruschetta.  How can you go wrong with all of these wonderful summer flavors combined together? The chili flakes are added to give the bruschetta just a little kick, and the Pizza Blend is the perfect topping.  Try it as an appetizer or side dish- it is a really delicious and special summer treat!

 

Ingredients:

Large baguette, sliced on an angle (about 1/2 inch thick)

2 - 3 cups chopped fresh tomatoes

1/2 large red onion, chopped

2 minced garlic cloves

1/2 cup chopped fresh basil

2 Tblspns Olive Oil

2 Tblspns Balsamic Vinegar

1/4 cup sliced olives

1/2 tsp chili flakes

1 tsp salt

1 Tblspn Pizza Blend

 

Directions: 
Toast each baguette slice.  Put a few drops of  olive oil on the surface of each slice, and then top with a few pieces of the garlic (just a little on each slice).  Sprinkle each slice with salt.

Combine the next 9 ingredients in a bowl and mix gently.  Place about 2 Tblspns of the tomato mixture on top of each prepared baguette. Add a few drops of olive oil on top of the tomato mixture and then sprinkle the Pizza Blend on top of the tomatoes on each baguette.  Serve cold.
