A blend of 6 different spices make these cookies extraordinary in flavor & texture. The ginger flavor lingers in your mouth after the cookie is gone. So different and so good!
Ingredients:
2 1/4 cup flour
2 tsp baking soda
2 1/4 tsp ground Ginger
3/4 tsp Cardamom
3/4 tsp True Cinnamon
1/2 tsp Coriander
1/2 tsp Allspice
1/4 tsp Black Pepper
1/4 cup chopped Crystallized Ginger
1/2 cup shortening
1/4 cup butter (room temperature)
1 cup dark brown sugar
1 egg
1/4 cup honey
1 tsp almond extract
3/4 cup turbinado (raw) sugar
Directions: Whisk together & then set aside: flour, baking soda, spices, crystallized ginger, & salt. In a large bowl, mix together with an electric mixer until light and fluffy- brown sugar, butter & shortening. Add egg, honey, and extract and beat until blended. Stir in flour mixture (with a spoon) and mix until blended. Cover and refrigerate for one hour. Using wet hands, form dough into 1 inch balls and then roll the balls in the turbinado sugar to coat completely. Place sugared balls on a lightly sprayed cookie sheet and bake for about 12 minutes in a 350 degree oven. Cool on a rack.
