This is a rich, chocolate bread that most will never guess contains zucchini! The zucchini helps make the bread moist and the Garam Masala spice is a wonderful, exotic complement for the chocolate. With the chocolate glaze topping - this bread can easily be served as a delicious, decadent dessert.


2 eggs

1 cup vegetable oil

1 cup (white) sugar

2 cups shredded zucchini

1/3 cup melted dark chocolate

1/4 cup cocoa powder

1 tsp vanilla extract

1 1/2 cups flour

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 1/2 tsp Garam Masala

3/4 cup semi-sweet chocolate chips


Blend together- 1 cup melted semi-sweet chocolate chips & 1- 2 tsp cream

Directions: Preheat oven to 350 degrees. Grease (with cooking spray) two loaf pans. Mix together (with a hand-held mixer) the oil, sugar, and eggs. Mix for about 5 minutes. Add the melted dark chocolate, vanilla extract, and zucchini and stir until combined. In a separate bowl blend the flour, baking soda, baking powder, salt, cocoa powder, and Garam Masala. Combine the flour mixture with the egg mixture. Fold in the 3/4 cup of chocolate chips. Pour the batter into the prepared pans and place in the preheated oven. Bake for about 45 minutes or until a knife inserted into the middle of the loaf comes out clean. Cool completely on a wire rack. Pour the chocolate glaze over the cooled loaves and serve.
